Update: I have taken a temporary position and will be closing Street Wheat for the time being to pursue this opportunity. It takes 30+ hours to prepare croissants each week at the current volume and unfortunately I am unable to do both. Welcome to Street Wheat.
We’re a micro-bakery operating out of Uptown, Minneapolis. Our storefront porch is open Sundays at 9AM—11AM (or until we sell out). No machines. No middlemen. Just laiminated pastry, made with real butter and rolled with real anger.
Street Wheat is run by Nikhil Saxena, ex renewables consultant, now full time anti-capitalist entrepreneur. We use local ingredients wherever possible—not because it’s trendy, but because we’d rather support our neighbors than some faceless factory farm.
We bake small (but growing) batches of croissants and rotating pastry specials. You can pre-order to reserve yours, or show up early to beat the crowd, specials often sell out in an hour.
We also do special orders, small-medium scale catering, and occasional baking classes—because knowledge should be shared, not hoarded.
